Corn Fritters


I used two of the fresh ears of corn to make fresh corn fritters from......you guessed it- Vegan with a Vengeance. Yikes, I do have other cookbooks. They were so good, sweet and very eggy in taste and texture.

VwaV is my favorite cookbook & corn is my favorite vegetable, and i'm yet to try vwav corn fritters! yours look great.

Honestly, I find it so amazing that you have taken the time to share this with all of us. Please keep on posting. Are the recipes on your page also? I want to try all of this food. I bet you make a great hummus with squash...mmmmmmmmmmmmm mmmmmmmmmmm....
I bet you could convince Meatloaf to change his name to Soyloaf (hahaha). Anyways, I'm hooked on Project Produce, and will come back often...

These do look great!
This is my first time visiting your blog, and I hope to see more. I used to live in Southern CA until last year (Irvine), and I never realized there was a CSA anywhere near there!

That does it. Now I am going to buy this cookbook. I try to pick one book a month to buy and since this is the 7th or 8th post I have read with something from this book, I am going for it. Thanks for the final push over which one to buy. Yummy post!
